This Gyuto has a 254mm (10 in) cutting edge and features a k-tip profile. The steel is a forged gomai billet featuring a 15n20 core, 1084 middle layer with an outer jacket of random pattern damascus consisting of 15 layers of mild steel and pure nickel. The blade has been etched to reveal the pattern and has a durable hard carnauba wax finish. The spine and choil are rounded for maximum comfort while cutting.

The handle is a segmented octagonal wa. The main body is 7000 year old bog oak from northern Europe, the bolster is buckeye burl, and it features a spacer of nickel silver. Both of the woods are stabilized for added strength and durability. The handle is finished in Tru-oil for water resistance and a brilliant satin feel.

Included is a saya made from white oak. It is a stacked construction with a center rib of synthetic material to prevent damage to the edge of the blade. The wood has been stained black and finished with a semi-gloss acrylic for long lasting durability. It features a locating pin to keep the knife secure, with a decorative head made from dyed quilted maple. Al the fittings on the saya are nickel silver to match the handle.

The overall aesthetic of this mono-chromatic blade is fantastic, and the thin geometry of the blade combined with the light weight of 206.5 g (7.3 oz) add up to be one serious performer in the kitchen!
